Cooking with fresh herbs really enhance the flavors of food without adding fat or calories content. There are hundreds of varieties of fresh herbs available for the common cook and growers continue to push the envelope in creating new varieties. My cooking with fresh herbs section is a starting point if you will. I have listed many of the most popular fresh herbs here including basis, thyme, dill and tarragon (just to name several). I have also included pictures of each herb as well as information on how to use each herb in the kitchen. Often confused with “spices” herbs consist of the leafs of plants where “spices” refer to the dried seeds and berries. Cooking with spices offer the home cook many options for flavoring foods and recipes, however I often find that many home cooks are intimidated by the sear numbers of spices available. Often times instead of trying something new cooks will opt instead for the tried and true. While this is practical it also limits learning and great tasting food. This section contains a great deal of information on spices, hopefully you will find this useful in helping to understand some of today’s spices. Hot peppers or “chile peppers” are used thought the world in many types of ethnic cuisine. From the Middle East to the Far East and down thought Mexico and Southern America chile peppers are an important ingredient. This section will focus on the names of hot peppers, just how hot and spicy each pepper is and also give some information regarding types of cuisine the pepper is used for. When cooking fish there are several things to remember, doing so will result in better tasting fish whether fresh or frozen. It goes without saying that fresh or water fish should be as fresh as possible, if it smells fishy it’s old. Fresh fish has no odor and most salt water fish smell of salt water, go figure. When purchasing fish from your local market ALWAYS ask questions and look for the best “deal”. If you see a fish that looks good to you ask the butcher when that fish arrived, you might also want to ask him or her what is the freshest fish. Another fresh “indicator” is the eye’s of a fish, if the fish is fresh the eyes will not be cloudy. Cooking fish to an internal temperature of 145 degrees, anything higher than that will result in dry fish.
